Our Story
The Brothers Behind Café & Ristorante Valencia
Over the years, Café & Ristorante Valencia has become a beloved part of Sorø — a small, family-owned restaurant where guests are greeted with warm smiles and authentic flavors. But the story of Valencia began long before. When brothers Charles and Joe Ibrahim arrived in Denmark, they both started working at an Italian restaurant, honing their skills and deepening their passion for hospitality and great food.
Charles perfected his craft in the kitchen, while Joe built upon his training as a waiter, mastering the art of creating exceptional guest experiences. Together, they opened their first restaurant in Valby, gaining experience and success before settling in Sorø 25 years ago. Here, they established Café & Ristorante Valencia, now known as a place where tradition, quality, and community come together.

With over 40 years of experience as a chef and a culinary journey that began in Lebanon, Charles brings a world of flavors to every dish that leaves his kitchen. His passion for blending fresh ingredients with authentic taste has been the foundation of his cooking since day one.
Every plate he prepares is crafted with skill and heart, staying true to his mission: to create dishes that bring warmth to the soul and bring people together. With a unique ability to balance tradition and innovation, Charles’ love for Mediterranean cuisine shines through in every bite.

Joe Ibrahim
Joe is the familiar face behind Café & Ristorante Valencia and a true driving force in Sorø. As a trained waiter, he has an exceptional talent for making every guest feel like the center of attention, creating a warm and welcoming atmosphere.
For the past 25 years, Joe has become a cornerstone of the local community, always ready with a smile and a heartfelt welcome.
